What is freeze-drying?

Freeze-drying—also known as lyophilisation—first freezes the food and then removes ice as vapour under vacuum. Because the product stays at a low temperature during drying, much of its original structure, colour, aroma and flavour can be maintained.

The finished ingredient is dry, crisp and lightweight. It may be eaten as-is, milled into powder or rapidly rehydrated, making it a flexible choice for modern food products.
